Why This Recipe Works

It is no secret that I love everything relating to Mexican food and drink. Margaritas, 7-layer dips, guacamole, enchiladas.. I want it all. Pronto. Every year when Cinco de Mayo approaches I start thinking and dreaming up delicious Mexican food creations.

This year I had the thought to transform tacos into a finger food! Fun! And how perfect for parties because there is nothing that screams PARTY louder than finger-food fare. Make these super easy, super yummy, customizable Taco Cups for your next Cinco de Mayo or summer (or winter!) party.

Set out a handful of toppings so guests can add what they like. A few topping suggestions: sour cream, lettuce, tomatoes, cilantro, lime wedges, avocados, guacamole, salsa and taco sauce!

How To Make Taco Cups

These are a fun and different way to serve tacos in just a few bites and without the mess. These are perfect wonton tacos for parties!

  • Preheat oven to 375 degrees F and coat a 12-cup muffin pan with cooking spray. Place 2 wonton wrappers in each muffin cup (stagger the wrappers!), pressing all the way down to the bottom and up the sides.
  • Cook ground beef in a large skillet over medium heat until no longer pink; drain. Add taco seasoning and water and cook until liquid has reduced. Scoop 2 tablespoons of the meat into each prepared wonton cup. Top with a small handful of shredded cheese. Bake in the preheated oven for 10-12 minutes, or until cheese has melted and the edges of the wonton wrappers are golden brown.
  • Remove from oven and top each cup with your favorite taco toppings: lettuce, tomatoes, sour cream, black olives, green onions and cilantro.
  • Serve immediately!

Recipe Notes

  • Add a can of Rotel with green chilis and diced tomatoes into the hamburger along with the taco seasoning or in place of taco seasoning. This will keep your meat moist and flavorful!
  • To make your taco cups vegetarian, you can replace taco meat with refried beans. Or just add a dollop of beans to the cup with the meat by placing it inside the wonton before your meat.

Make Ahead Freezer Recipe

This is a great meal/appetizer to prep ahead of time. After purchasing your meat from the grocery store (or having it delivered from Instacart!), turn it into taco meat!

Cook a pound or two of ground beef, add taco seasoning and 1/2 cup water or broth and let the mixture thicken for a few minutes. Once it cools, place it into a resealable freezer bag and place in a flat layer in the freezer. Pull it out when you’re ready to use the taco meat in Taco Cups or Baked Tacos!
