  1. Another winner, e/a! We have a dear elderly neighbor who is very ill, and about all he enjoys these days is a good bowl of soup. I'm always trying to find new recipes to vary his simple diet, and this one was a huge hit. So much nutrition packed into each bowl---very important when an invalid can't eat much! His wife said, "Mmm--make that again!" I will!

  2. This was phenomenal, and got rave reviews from my boyfriend, father, and stepmom. Followed recipe exactly except for omitted celery (personal preference). Used andouille sausage and a mixture of 1/2 red lentils and 1/2 green. Completely forgot the cider vinegar at the end. Didn't need salt or anything - thank you!

  3. I wasn't nearly as impressed with this soup as I had expected to be. For as much as was in it, there was surprisingly little flavor. It did get better after a full day in the fridge, but I probably will not make it again unless I add dramatically more spice to perk it up.

  4. This was tasty, and good for you. Mine needed more liquid.

  5. Even though we're in the full heat of summer, I was craving a simple, healthy soup. This recipe totally fit the bill. The only changes I made was to add some chopped mushroom and had to substitute a little cilantro for the parsley. Thanks for posting the recipe.

Tweaks

  1. This soup is fantastic. I did use ground turkey sausage and browned it with the onion instead of smoked sausage. I also used fresh tomatoes instead of canned, so I upped my broth. This is my first try with lentils...but not my last!!

  3. This is a recipe I would make again. I used quinoa instead of rice and omitted the sausage. Thanks for sharing.

  4. Delicious Soup! So Healthy! Made small substitutions: used 3.5 bouillon cubes with 5 cups water, added 8 oz tomato sauce, used 2 (16 oz) cans of stewed tomatoes. Didn't have the smoked sausage but took a few slices off a frozen ham in the freezer! I will definately try the sausage next time. Also added another cup of water near the end of the cooking to make it "soupier". The recipe makes a lot! I'm sure it will be a thick stew tonite but I'm looking forward to it. Thanks Evelyn!

  5. This was a lovely thick and filling soup. I made mine with a bacon hock instead of sausage. All the family enjoyed. A very tasty comfort meal. Thanks for sharing.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong?Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.

FAQs

Why is my lentil soup tasteless? ›

To avoid a bland lentil soup, use a flavorful broth—whether that's homemade or store-bought chicken or vegetable broth. The other key is building flavor. To do so, use aromatics like onions and garlic, include fresh or dried herbs, and season well with salt and pepper.

Do I need to rinse lentils before making soup? ›

Lentils do not require it but can be soaked in order to reduce cooking time by about half. Before cooking, rinse lentils in cold water, pick over to remove debris or shrivelled lentils, then drain.

What can you add to lentils to make them taste better? ›

You can also add salt, aromatics like a halved onion, herbs, and spices to the pot before the lentils and the water, like beans, or wait until they're done cooking to flavor them.

Why is my lentil soup not thick? ›

Cook It Longer

Sometimes soup just needs to simmer longer to reach the perfect consistency. Check to see if the vegetables are tender, and then taste the broth. If the soup tastes a bit watery, give it more time.

Why does lentil soup upset my stomach? ›

Eating lentils can cause gas and bloating because they're high in fiber that your body is unable to break down. While fiber plays a large role in supporting and regulating your digestive system and bowel movements, it can also produce bacteria that leads to cramping and gas pains.

How do I increase the depth of flavor in soup? ›

Add acidic ingredients.

Foods that have a great deal of acidity, like lemon juice, vinegar, white wine, and tomato puree, can help liven up the flavor of bland-tasting bone and other broths. "The acidity of these ingredients works to complement and enhance the broth's flavors, not mask it.

What color lentils are best for soup? ›

I recommend using green or French green lentils because they hold their shape in the soup, adding satisfying texture. Brown lentils are also a fine option.

Can you overcook lentils in soup? ›

This time, it turned out mushy and there wasn't a whole lentil to be found. Damn it! I figured out later that it spent about 2.5 hours too long in the slow cooker (a little miscalculation on my part). If you're like me and have overcooked Lentil Soup then you're in luck because I'm going to show you how to revive it.

Why did my lentil soup turn brown? ›

As the veggies hit the boiling water, volatile acids are released into the water and are carried away in the steam. When the pot is covered, the steam and the acids it contains are forced back into the water. Once there, the acids react with the chlorophyll in the vegetables, turning them an unsightly shade of brown.

Why do you add baking soda to lentils? ›

Summary: Baking soda is mostly used to soften the beans faster and decrease cooking time by increasing pH. In some scenarios, it has been shown to aid in breaking down gas-causing sugars as well. Higher concentrations of baking soda and/or pressure cooking may be needed to make this latter effect significant.

What does baking soda do to lentils? ›

Baking soda can help significantly since it increases the pH of the water, disintegrating that pectin and allowing beans to soften quicker. Baking soda also removes minerals from hard water, which can prevent beans from hydrating as quickly.

Why did my lentil soup turn black? ›

the color change you've observed is from oxidation. If you want to prevent this, lay some plastic wrap over the surface of your lentils to prevent air from getting to them, or add some acid, like lime juice, to the recipe.

How do you fix bland lentil soup? ›

Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful, including by adding them into soup. When other ingredients are introduced that complement lentils like onions, garlic, spices, and lemon, the taste is out of this world.

What is the foam on top of lentil soup? ›

That means the foam will typically appear when making meat-based broths and, to a lesser degree, soups made from high-protein vegetables such as chickpeas and lentils. When those coagulated proteins cluster together, they can create air pockets, which is what causes the “sudsy bubbles,” says Trout.

How do you fix bland lentils? ›

Follow this tip: Add a few cloves of garlic, a bay leaf, a spring of rosemary, half of an onion, or a combination of these aromatics to the cooking water or stock to help flavor the lentils.

Why are my lentils bland? ›

The simple answer: you cooked them too long. Lentils are actually quite difficult to get right.

Why are lentils so bland? ›

Lentils have subtle flavors and gentle textures that cook faster than other dried legumes, absorbing cooking liquid in 30 minutes or less and doubling in size. However, if you simply throw them in a pot with water, you'll end up with a bland bowl of beans.
