directions

  • Preheat oven to 300°F (150°C).
  • Cut each full rack of ribs in half, so that you have 4 half racks.
  • Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chili pepper over meat.
  • Wrap each half rack in aluminum foil.
  • Bake for 2 1/2 hours.
  • Meanwhile, heat oil in a medium saucepan over medium heat.
  • Cook and stir the onions in oil for 5 minutes.
  • Stir in water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce.
  • Season with 2 teaspoons salt, 1/4 teaspoon black pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground chili pepper.
  • Bring mixture to a boil, then reduce heat.
  • Simmer for 1 1/4 hours, uncovered, or until sauce thickens.
  • Remove from heat, and set sauce aside.
  • Preheat an outdoor grill for high heat.
  • Remove the ribs from the oven, and let stand 10 minutes.
  • Remove the racks from the foil, and place on the grill.
  • Grill the ribs for 3 to 4 minutes on each side.
  • Brush sauce on the ribs while they're grilling, just before you serve them (adding it too early will burn it).

  1. here's the sixth *!!! I'm bummed. These ribs are so good that my family never wants to go out for bbq anymore. Why go out when we can make the best ribs at home. More work (hardly) for me, but happy tummies for the family. That's what is more important! Thanks for the delicious recipe!

  2. Okay, so these are some the best ribs I've ever made and eaten. The homemade bbq sauce is amazing. I normally don't like bbq sauce but this one wasn't too sweet. It was perfect!

  3. Oh man! Those ribs are FANTASTIC! My outdoor grill was out of gas at the time I was making this recipe, so instead of grilling, I broiled the ribs. The meat was so tender and full of flavor. I had a lot sauce left though. It's just so good to pair it with meat! Can't complain. Thanks for the recipe!

  4. Ruined our ‘let’s try this rib place’...hard to find in the northeast. Fam asks for this recipe weekly! As a dietitian I make them every few months and yes reduce the salt. Usually do not have whiskey around??

  5. Best rib recipe ever. I first came across it about a year ago and have made them probably half a dozen times since. Followed the original recipe except swapped in maple syrup for the honey and omitted the liquid smoke. I will never use another rib recipe. The sauce is excellent for basting grilled chicken legs too. Thank you, Scott Hibbard!

Tweaks

  1. Made this recipe last night. I followed the recipe but added some dry mustard. The ribs were very tasty, very sweet. I also did not have chili pepper, just red pepper flakes so the sauce had a bite.

  2. sauce: maple syrup instead of honey, omitted liquid smoke

  3. I'm only rating this on the cooking method, not on the sauce. I took a shortcut and used Sweet Baby Ray's Barbeque Sauce instead. I don't eat meat, but I cook it for my family. They loved, loved, loved this. The meat was literally falling off the bones when I turned the ribs on the grill. Our dinner was filled with mmmmmmmmmmm's. My DH was still talking about the ribs the next day. I guess I will be making ribs again soon. Thanks for a great cooking method!
